November 2nd & 3rd will include special events focusing on food and wine – and of course, it is all set against the backdrop of Lake Superior! Bluefin Bay has been hosting Food & Wine Lovers Events for more than 20 years and we’re delighted to partner with Mpls-St. Paul Magazine as our media partner for this long-standing event.

We’re excited to welcome our guest chef for this year’s Friday & Saturday night dinners: Executive Chef Keven Kvalsten from the FireLake Grill House & Cocktail Bar in Minneapolis. Read his full bio here.

Each course will be paired with wine by our friends at Johnson Brothers Wine Company making the evenings a real treat for those who love great food and wine.

Chef Kvalsten has put together a wonderful menu for the 4-course dinner on Friday evening and the 5-course dinner on Saturday evening:

Friday, November 2nd at 7 pm:

  • Amuse Bouche: Smoked Whitefish
    • garlic toast, cucumber, dill, crème Fraiche
  • Pheasant Confit
    • great northern beans, frisee, bacon marmalade
  • Duck Breast

  • Poached Walleye

Spring Food & Wine Lovers Weekend!

Two Glasses of White Wine at Bluefin BayBluefin Bay has been hosting Food & Wine Lovers weekends for more than 20 years, twice per year – in the spring and the fall.

We are getting excited for the spring weekend coming up May 4-5!

Each Food & Wine Lovers Weekend includes a host of activities revolving around food and wine — and of course all set against the backdrop of Lake Superior.

For our Spring 2018 Food & Wine Lovers Weekend we are partnering with Guest Chef Steven Schulz from the Toasted Frog in Fargo, ND. For Friday’s four-course dinner and Saturday’s five-course dinner, Chef Schulz is excited to feature New World cuisine with global influences. Here are a few of the delicious items you’ll find on the weekend’s menus: Cold Smoked Swordfish, Fennel Braised Pork Shank, Seared Salmon in Mussel Cream Sauce, Pepper Crusted Filet, Spiced Panna Cotta, and so much more! Johnson Brother’s Wine Company is busy choosing wine selections that will beautifully pair with each night’s menu. We’re delighted to partner with Mpls-St. Paul Magazine as our media partner for this long-standing event.

Fall Food & Wine Lovers Weekend Recap

Another Fall Food & Wine Lovers Weekend is complete and proved once again to be two days full of great food, wine, and fun.

This year’s weekend theme was inspired by the cuisine of South America. Our guest chef was Jeffrey Zervas from Lake Avenue Restaurant and Bar in Duluth and he carefully crafted a unique, well-rounded menu for each evening. Chef Zervas utilized many ingredients unique to South America like those used in the Antichucos beef dish which combined beef heart with sirloin and an Aji Amarillo sauce. Amazing! Another common South American ingredient was locally sourced here in Minnesota. A regional certified goat farmer worked with Chef Zervas to provide goat for the tasty Carbonada dish which contained the braised goat, pumpkin, butternut squash, corn and dried fruit. Diners were also treated to main course selections like a delightful Pollo a la Brasa on Friday and Saturday’s exquisite Chili Oil Poached Sea Bass.

Our friends at Johnson Brothers expertly paired each course with South American wines to compliment the flavors of Chef Zervas’ creations. Guests had the rare opportunity to taste a Brazilian wine which is uncommon to find in the United States. The Saltan Classic Tannat from Serra Gaucha Brazil is a dark inky red wine and its long lingering finish was a hit with this weekend’s diners.

The Bluefin Bay wine lovers weekends always include a tasting on Saturday afternoon where guests had, even more, opportunities to sample some of the best wines from South America.

The weather may have been a little chilly but there’s nothing like a food and wine weekend at Bluefin Bay Family of Resorts to warm you up!
