Meet Our New Culinary Team at Spring Food & Wine Lovers May 5-6, 2017
Guests who join us for our Spring Food and Wine Lovers Weekend are in for a real treat – and a meet and greet! We are excited to announce that Bluefin Bay’s new culinary duo will be hosting the Spring Food & Wine Lovers event. And neither in this dynamic duo are strangers to the hospitality business. We are delighted to welcome new Executive Chef, Dan Dommer – most recently Executive Chef at the H Hotel in Midland, Michigan – and new Food & Beverage Director, James Taylor, formerly of Ruttger’s Bay Lake Lodge in Brainerd. Both culinary experts relocated to Tofte, MN, and joined the Bluefin Bay team in early March.
Executive Chef, Dan Dommer
Chef Dan Dommer brings a range of culinary experience and expertise to Bluefin Bay’s three resort restaurants – the Bluefin Grille, Coho Café & Bakery, and Waves Cafe. In addition to serving as chef at the prestigious H Hotels in Michigan, Chef Dan has been a personal chef, pastry chef, banquet chef, a cook book recipe tester, and a sommelier in yacht clubs, country clubs, and AAA four diamond hotels. He has worked at prestigious properties such as the Greenbrier and cooked for the Dow Chemical Family of Trustees.
Food & Beverage Director, James Taylor
New Food and Beverage Director James Taylor (no, not the famous musician) hails from Southampton, England, coming to Minnesota through an internship program after receiving his hospitality management degree. Eighteen years, a wife and two children later, James is still in Minnesota expanding his record of success at premier Minnesota resorts and restaurants. He previously held Food & Beverage Management and Director positions at Grand View Lodge, Chase on the Lake, and Ruttger’s Bay Lake Lodge.
