At Bluefin Bay Family of Resorts, we believe that good food makes a vacation even more memorable. Which is why we’ve poured our hearts and souls into building a team that shares that belief. After an extensive search, we’re thrilled to introduce our new dynamic culinary duo.
Executive Chef Dan Dommer brings a range of culinary experience and expertise to Bluefin Bay’s three resort restaurants. He began his culinary education at the Scottsdale Culinary Institute in Arizona, continued at the internationally renowned Greenbrier Club in West Virginia and has held positions as a personal chef, pastry chef, banquet chef, and sommelier, most recently serving as Chef at the H Hotel in Midland, Michigan.
New Food and Beverage Director James Taylor originally hails from Southampton, England – arriving in Minnesota through an internship program after receiving his hospitality management degree. Eighteen years later, James is still expanding his record of success at premier Minnesota resorts and restaurants, most recently at Ruttger’s Bay Lake Lodge in Brainerd.
New Summer Menus: Our new culinary team isn’t the summer’s only exciting news — the warmer temps and longer days also bring some exciting updates to all our menus. At the Bluefin Grille, new delights include Sumac Crusted Salmon, Shrimp Monegasque Pappardelle and a Minnesota Duck Quesadilla, along with many familiar guest favorites. At Coho Cafe & Bakery, summer guests will love our new Salad Nicoise, Brisket Hoagie, Wild Rice Bratwurst and much more! And Waves Café at Surfside re-opened Memorial Day weekend with a new menu of great starters for breakfast or brunch and a fresh array of salads and sandwiches for lunch.
